I think one of the math projects might have an AVX 512 app. But I don't run them regularly and am not currently knowledgeable which one might have those apps.
Maybe someone more familiar can chime in to tell us.

depends on the project. for applications that can use and benefit from AVX512, absolutely.
the higher clock speed and IPC of the 7000-series CPUs gives a nice bump for everything else.
just have to decide if the cap on 16c/32t and 1-2 GPUs is acceptable for you.
