Attrition's worn down the list of projects I'd been using the last half dozen or so years, leaving Primegrid as the only reliable one left on the list. I'd like to have more than one spare available though.
Any suggestions on projects with high uptimes, and work unit availability? I'm looking for both CPU and GPU projects; for the former I'd prefer those that don't have a high performance GPU app also doing the same work because doing something a GPU can do 10-100x better is something of a waste.

I have always been a fan of Together We Are Powerful - Folding@home (foldingathome.org)
They have different work units for GPU's and CPU's and have interesting work.

Einstein has always been a reliable project. Both cpu and gpu available. But it has both types of app for each sub-project for the most part.
Only project I know of that is exclusively gpu based is GPUGrid but it does not meet your criteria of always available work or uptime lately. Has work again though today.

SRBase has both cpu and gpu tasks, NFS has lots of cpu tasks, as does Ithena both Computational and Measurements but they do go down at times although that is getting less and less as they improve their hardware. MLS has both cpu and gpu tasks, Yoyo also has cpu tasks, Cosmology has tasks and always seems to have them, as does Moo and MIlkyway and both of them also have both cpu and gpu tasks. Latin Squares has cpu tasks and never seems to run out of them as does ODLK. Rake Search has tasks but not every day of the year the same thing with Rosetta. World Community Grid has both cpu and gpu tasks but the gpu tasks can be hard to get and the cpu tasks are not available for every sub project all the time. SiDock has cpu tasks most of the time, TNGrid seems to always have tasks as does LHC and Universe. Yafu and Wanless(Linux only) also have enough cpu tasks to keep most pc's busy but neither has 10k of them. Then there are the various mini projects like Kryptos, Beef@home and MineCraft that go up and down pretty regularly. Here's a link to most of the projects I mentioned along with the OS's they support https://boinc.berkeley.edu/projects.php
Some projects even have Beta test sites that have tasks with some having tasks alot more regularly than others, ie Private GFN Server http://boincvm.proxyma.ru:30080/test4vm/home.php having about 5k tasks right now.
To me the problem is the lack of GPU projects as most new ones don't have the tech support to make a GPU application and none of the existing Projects seems to want to step up and help the newbies.
Here's a link to every application for every Boinc Project but alot of them no longer exist: https://stats6.free-dc.org/apps

The only problem I have with GPUGrid is that they take longer to run then the deadline for them on my laptops 1660 Ti gpu, they ran fine on my desktops though. Hopefully my new 12gb 3060 Ti desktop gpu will remedy that, once it gets here that is, Cyber Monday had a few so I got one.

I personally stack three projects to ensure I always have work across GPU/CPU resources. I'm currently running what I call Project EMU which is Einstein@home, Minecraft@home and Universe@home. So with Universe@home down most of this past weekend and Minecraft@home out of work for me at the moment, I had work coming from Einstein@home to keep things moving along. Diversify your projects and you'll never have an idle computer (or a low electric bill)!

SiDock and TN-Grid seem to have continous work at the moment. Rosetta, which was so, is a bit intermitant at the moment.

I agree but Gerasim has tasks right now too
