dual channel & triple channel memory

dual channel & triple channel memory:

Both are 240pin DDR3. If I cannibalize my older triple channel rig can I use those memory sticks in a new dual channel rig. Assuming of course that I stick like to like (ie. matching pairs - throwing out the odd ones). Or do I have to buy new memory again. I also assume that the memory speeds are appropriate for both MoBo's.
