If I am attached to multiple projects, do I need to run BOINC Manager for everything to work properly?

Depends what you mean by work properly. If working properly means the crunching continues then the answer is no, you don't have to leave BOINC manager running but you do have to leave BOINC client running. If you shutdown the client then the crunching stops.

Yes, I know of several ways to check, Task Manager or just check my CPU usage.
By "work properly", I was referring to switching projects at my designated time intervals.

Yes, that's the way to check and yes, the client will switch projects at your designated time interval even if the manager is shutdown.
