I'm going to be disconnected from the Internet for a period of time -- but my machine is going to be available to do work. The problem is, once the current workload is finished processing, I can't download any more.

I wish there was a way to request 10-15 WUs, that I could store on my machine and process. Then, when I get back to civilization, I could upload what was processed and continue normally.

Well, then go to Your account, edit Preferences
and set 'Connect to network about every' to say 5 days.
Then boinc, after updating preferences should download work for five days.
Don't set it too high, becouse You have to return work before it expires. This is 7 days for now.
And then, if You have more computers, then maybe You should use different sets of prefereces for different computers.
