If you simply want to delete your e-mail account, it won't affect the Einstein account at all.

Don't worry, it may take a day or two to get BOINCstats to catch up.

The reason BOINCstats takes awhile for their "stats" to catch up is the sampling rates of the different servers, and the BOINC project servers are from different locations than the BOINCstats server(s).
