can it work? Sure. But it’s gonna take a lot more tweaking to get things running right.
Would there be any benefits to us running this? I run Ubuntu 20 allowing only security updates because of stability issues.
From what I can tell, an immutable Linux installation will require a lot more administrative work than a "regular" installation (ie. the kind we are all used to). OpenSUSE Leap 16 will offer both kinds at installation/update time for, I presume, this very reason: those who want it can use it, those who do not can stay with what they have.
Personally, I have no intention of making the switch, nor do I see any good reason for any ordinary home user to do so.

The docker maintained by LSIO seems to be well cared for at least, I’ve submitted several bug reports and suggestions and they were fixed quickly. I use it on my TrueNAS server. Not being able to run Vbox isn’t of much consequence for me. But it’s definitely not as easy to manage if I want to change some files. Not suitable for most users I think. The whole immutable OS thing seems more trouble than it’s worth.

I have managed to screwup my PSENSOR display.
And no amount of purge, remove etc gets rid of the "remember what Psensor was doing when it shutdown".
Where is it being "remembered"? I need to clear that so I can actually see some temperatures again.

Desktop monitor apps usually keep their preferences and readings in their own hidden directory in /home.
Try looking for /home/.psensor and deleting the files in it or just remove the directory.

just open the sensor preferences and select them to be unhidden again.

According to the boinc website, https://boinc.berkeley.edu/wiki/Installing_on_Linux a flatpak version of boinc does exist. However, it is not maintained by boinc. (Neither is the docker version.)
Moreover, it appears to be impossible to run VirtuaBox work units from inside the flatpak:
