The CPU scheduling of Mac OS X Leopard seems to be quite buggy, especially making processes run as "nice" (low priority) has problems in OS X Leopard, see here for example. Restricting the number of cores that may be used simultaneously by BOINC for multicore CPUs seems to be a good way to limit BOINC usage of your CPU.
