Is it correct that some einstein@home projects only use CPU calculations while other einstein@home use the GPU ?

Yes, although as a matter of terminology the whole of Einstein is called the project, while below that are things called applications. Generally here at Einstein there are one or more applications purely using CPU, and one or more applications that do most of the computation on the GPU but also employ CPU services, at least to support the GPU with data transfer and management, and sometimes a material portion of the computation.
